Chocolate Pudding Cake
Serves 8 to 10

Ingredients
1 lb butter
1 cup coffee
1 cup granulated sugar
1 cup light brown sugar
1 lb semi sweet chocolate
8 whole eggs
1 oz. rum (optional)
Directions
- Heat butter, coffee, sugars in pot until sugar dissolves.
- Add chocolate.
- Temper hot items into eggs, then add eggs back to mixture.
- Strain mixture.
- Pour into 10" cake pan lined with parchment paper.
- Bake in 350 degree oven in water bath until set in the middle.
- Let cool overnight in fridge.
- Unmold and serve with ginger flavored whipped cream and candied ginger slices.
