Tim Love’s Thai Beef Skewers

Makes approx. 10 skewers

Thai Garlic Marinade 

  • 2 limes juiced
  • 2 cloves garlic, thinly sliced
  • 2/3 cup fish sauce
  • 1/2 cup low sodium soy sauce
  • 1 tbsp sambal or favorite Asian hot sauce
  • 1 tsp microplane ginger
  • 1/2 cup thinly-sliced spring onions
  • 2 tbsp sesame oil
  • Approx. 40 leaves of fresh cilantro
  • 1 1/2 tbsp sugar

Whisk together in a mixing bowl and reserve half of marinade in a separate bowl for later.

Skewers

  • Wooden skewers
  • 2 lbs skirt steak
  • 4 turnips
  • 10 cherry tomatoes
  • 1 red bell pepper
  • Tops of spring onions

Soak the skewers in water for at least one hour. Trim the turnips and cut into quarters; use 2 quarters per skewer. Cut red bell peppers into 1″ squares. Alternate meat with onions, turnips, cherry tomatoes (keep whole) and red bell peppers. After the skewers are assembled, place in a dish and pour half of the marinade mixture on top. Marinade for one hour, rotating each skewer after 30 minutes.

Heat grill to high. Grill for 3 minutes per side, basting with the reserve marinade throughout the cooking process. Use leftover marinade as dipping sauce.
